Spiced Banana and Peanut Butter Turnovers

  • 1 packet (around 480g) frozen Puff pastry sheets
  • 4 Bananas
  • Zest of 1 Orange
  • 2 tablespoons freshly squeezed Orange juice
  • 1 teaspoon Cornflour
  • ½ teaspoon Rempah kueh (Spice mix)
  • 6 tablespoons Peanut butter
  • 1 tablespoon Milk
  • Demerara sugar for sprinkling
  1. Preheat the oven to 200C. Roll out each pastry sheet to 8 x 8 inches, then cut into 4 squares
  2. Sliced the bananas finely, then toss with the rempah kueh, the orange zest, orange juice and the cornflour
  3. Spread 1 teaspoon of peanut butter onto the centre of each pastry square, then top with 1-2 tablespoons of the banana mixture, making sure to leave the edges of the pastry clean
  4. Brush the edges lightly with the egg wash mixture and seal shut. Use a fork to crimp the edges
  5. Prick the top of each turnover lightly with a fork, then brush them with some egg wash, and top with some demerara sugar for crunch
  6. Bake in the preheated oven for 20 minutes, until golden brown on the outside
