Ingredients
  • ¼ cup oil
  • 1 teaspoon ground cumin
  • 1 tablespoon garam masala
  • ¼ cup dried fenugreek leaves, crushed
  • A pinch of pepper
  • A pinch of salt
  • 2 cobs of corn, husked
  • 4 portabello mushrooms, stems and gills removed
  • 1 red pepper, seeds removed and cut in half
  • 1 yellow pepper, seeds removed and cut in half
Method
  1. Preheat grill to medium-high
  2. Put oil, spices and salt into a small bowl and stir
  3. Brush onto vegetables and grill until they are tender-crisp and slightly charred around the edges, brushing more spice oil onto them as they grill
  4. Cut into bite sized pieces and serve on a platter or as a side dish
