Ingredients
  • Marron
  • 8 fresh Marron
  • 1 teaspoon Corriander powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Fennel powder
  • 300 grams Rice noodles
  • Spicy Tomato Sauce
  • 4 Red chilli
  • 200 grams Tomato coulis
  • 5 sliced Garlic
  • 1 chopped Onion
  • 1 tablespoon Curry leaves
  • 300 millilitres Chicken stock
Method
  1. Marron and Rice Noodles:
  2. Cut the marron into half and clean out the innards
  3. Lightly season with the spice powders, salt and pepper
  4. Pan fry for 3 minutes on both sides in a pan with corn oil
  1. Spicy Tomato Sauce:
  2. Fry the curry leaves until fragrant in a pot
  3. Add in the garlic and onions and continue cooking until brown
  4. Slice the Chillies and add into the pot together with the tomato coulis
  5. Pour in the chicken stock and simmer for 15 minutes
  6. Season to taste
  1. Quail Egg:
  2. Boil the quail eggs for 3 minutes
  3. Shock in ice water and remove the shells
