Spiced Norwegian Salmon Trayback with Green Sauce

  • Green Sauce:
  • ½ cup cashew nuts, toasted
  • ¾ cup plain yogurt
  • 3 green Chillies, deseeded
  • 1 large lime juice and zest
  • 2 cloves garlic
  • ½ cup tightly packed coriander leaves
  • ½ cup tightly packed Italian parsley leaves
  • 2 tablespoons chopped chives
  • ¼ teaspoon salt
  • Norwegian Salmon Bake:
  • 6 Norwegian Salmon steaks
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 300 grams Japanese mayonnaise
  • 6-8 tablespoon curry powder
  • ¼ teaspoon salt
  • 18-20 piece of okra, trimmed and cut into two
  • 18-20 cherry tomatoes
  • 2 large onions, peeled and thinly sliced
  1. In a food processor, blend cashew nuts, plain yogurt, chillies, juice and zest of 1 lime, garlic, coriander, Italian parsley, chives and salt together until smooth. Transfer to a small bowl and set aside.
  2. To prepare the Norwegian Salmon bake, preheat the oven to 220°C.
  3. Mix the mayonnaise with the curry powder and ¼ teaspoon salt.
  4. In separate bowl, toss the okra and tomato pieces with salt and pepper and add some oil to cover. Set aside.
  5. In a deep roasting tin, spread the sliced onion out evenly. Pat dry the Norwegian Salmon steaks on both sides and season with salt and pepper.
  6. Spread the curry mayonnaise on one side of the Norwegian Salmon steaks. Lay the steaks on top of the sliced onions and scatter the okra and tomato pieces around.
  7. Bake for 15-20 minutes until the mayonnaise topping turns golden brown and the Norwegian Salmon is just cooked through. Drizzle green sauce over and serve!
