Spiced Yogurt with Summer Berries

  • 2 cups plain yogurt, 3.8% fat
  • 1 teaspoon saffron
  • 1 teaspoon cardamom seeds, crushed in mortar and pestle
  • 2 tablespoons honey
  • Toasted sliced almonds for garnish
  • Fresh berries for garnish
  1. Line a large sieve with cheesecloth, pour in the yogurt and fold over the edges so it is completely covered
  2. Place the sieve over a bowl and put into a fridge for 12 hours, or overnight
  3. Put the saffron into a small bowl and add about 2 tablespoons of boiling water
  4. Let steep for 5 minutes and then strain it, reserving the saffron
  5. Put the drained yogurt into a bowl, add the steeped saffron, cardamom and honey and stir well to combine
  6. Pour into individual serving bowls and refrigerate until ready to serve
  7. Sprinkle with toasted almonds and berries just prior to serving
