Spicy Sardine Fried Rice (Nasi Goreng Sarden)

  • 1 can Sardines in tomato sauce
  • 2 medium size Shallots, chopped roughly
  • 6 Chilli padi (Bird's eye chilli), chopped roughly
  • 4 cloves Garlic chopped roughly
  • 2 tablespoons Soy sauce
  • 1 tablespoon Sweet soy sauce
  • 4 cups cooked White rice
  • 1 teaspoon Belacan paste (Shrimp paste)
  • 1 cup frozen Peas
  • 150 grams Romaine lettuce
  • 2 kampung (free range) Eggs
  • 10 tablespoons Cooking oil
  • 2 Red chillies sliced thinly for garnish
  • Sea salt and Brown sugar to taste
  • 1 jug Water
  1. In a bowl crack 2 eggs, season with salt and a bit of water and beat lightly
  2. In a small frying pan, add in oil and make an egg pancake and set aside for later
  3. In a wok, turn on heat to high and add in 6 tablespoons of oil, and fry onion, garlic, chilli padi and belacan paste until fragrant and slightly caramalised
  4. Then add in the sardines from the tin and half of the tomato sauce, soy sauce and sweet soy sauce, Fry for a few minutes before adding frozen peas and stir for 2 minutes
  5. Add in cooked white rice and stir fry on high heat for 6 - 10 minutes. Taste and adjust according to your liking (add salt if necessary or sugar if it's too spicy)
  6. Slice romaine lettuce into thin slices and roll up the egg pancake and cut thinly to create ribbons
  7. Place the sardine fried rice in a serving bowl, sprinkle egg ribbons and dress with the thinly sliced lettuce leaves and sprinkle with fresh red chillies
