Spicy Soba Salad

  • 2 Japanese cucumbers, julienned
  • 1 Carrot, peeled and julienned
  • 2 bundles Soba (Japanese buckwheat noodles)
  • Dressing:
  • ½ cup Peanut butter
  • 1 tablespoon Soy sauce
  • 1 tablespoon Honey
  • ½ tablespoon Rice vinegar
  • Finely chopped Birds’ eye chilli (Chilli padi)
  • ½ cup Coriander leaves, chopped
  • Some water, if needed
  1. Cook the soba noodles, drain and rinse in cold water. Toss with some oil to prevent sticking
  2. Mix all the dressing ingredients together, diluting with some water if the dressing is too thick. Combine the noodles, dressing, cucumber and carrot, and toss to serve
