Spinach Frittata with Sautéed Mushrooms

Ingredients
  • 6 eggs
  • ½ cup cooking cream
  • 1 cup aged cheddar cheese
  • Parmesan cheese (according to taste)
  • Salt and pepper to taste
  • Frittata Filling:
  • 1 handful spinach
  • 10 button mushrooms
  • 10 shiitake mushrooms
  • ½ yellow onion
  • 3 cloves garlic
  • 1 sprig thyme
  • 3 tbsp olive oil
Method
  1. Preheat built in oven to 200°C.
  2. Combine eggs, cream, cheddar cheese, salt and pepper. Beat all ingredients until well mixed.
  3. Sauté the other filling ingredients and add them into a buttered muffin tray.
  4. Pour the egg mixture into the muffin tray.
  5. Grate Parmesan cheese on top.
  6. Bake in oven for 10 minutes until frittatas rise and turn golden brown.
  7. Remove from oven and unmold.
  8. Grate more Parmesan cheese on top. Serve when ready.
