Squid, Chilli Soba Noodles

  • 200 grams cooked Soba noodles
  • 300 grams cleaned Squid
  • Half a large Red chilli( chopped)
  • 1 handful of Coriander and Mint leaves
  • 1 tablespoon of roasted Macadamia nuts (chopped)
  • 1 tablespoon of fried Shallots
  • 1 Lime
  • 1 hand full of Pea tendrils or Sprouts
  • Half a Spanish onion peeled and sliced
  • 1 tablespoon Vegetable oil
  • 2 tablespoons Fish sauce
  • 2 tablespoons Soy
  • 1 teaspoon Caster sugar

Season and BBQ the squid with oil and salt, BBQ for 1 – 2 minutes. Remove thinly slice and put into a bowl, season with, lime, sugar, fish sauce and soy. Add all other ingredients to the bowl. Check for taste then serve with nuts and eshallots on top
