Steak with Walnut and Blue Cheese
A perfect dinner date meal of steak and salad by Marinka from At Home with Marinka

Ingredients
  • Steak:
  • 1 teaspoon salt
  • ½ teaspoon sugar
  • ¼ teaspoon black pepper
  • 2 tenderloin beef (200 gr, 2 centimeters thick)
  • 1 tablespoon oil
  • 1 tablespoon butter
  • Cheese and Walnut mix:
  • 2 tablespoons blue Cheese
  • 1 tablespoon butter
  • 1 tablespoon toasted walnuts, crushed
  • Gravy Sauce:
  • 2 garlic, chopped
  • 2 shallots, chopped
  • 1 teaspoon butter
  • 100 milliliters beef broth
  • 50 milliliters cream
  • Salad:
  • 4 asparagus
  • 2 red radishes, sliced
  • 4 baby carrot
  • 3 cherry tomatoes, cut in half
  • 2 tablespoons red wine vinegar
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • ½ teaspoon sugar
  • ¼ teaspoon black pepper
  • Baby spinach, for serving
  • Cucumber, thin cut and rolled, for serving
Method
  1. Steak:
  2. Pour some salt, sugar, and black pepper on top of the chopping board and roll the beef for it to be seasoned
  3. Cut the tenderloins into rectangle shape. Keep the leftovers
  4. Pour oil into a pan
  5. Brown one side of the rectangle shape beef, then flip it, and put the beef in an ovenproof plate.
  6. Add a bit of butter on top while it’s still hot
  7. Sauté the leftovers in the pan, until browned
  8. Put it in the same plate as the rectangle one
  9. Put the beef into the oven at 180 C for 3 minutes
  10. When it’s done, set aside the beef, keep the beef juice
  11. Add the blue cheese mix on top of the beef while it’s still hot
  12. Put the beef back in the oven at 180 C for 1 minute
  13. When it’s done, let it rest for 10 minutes
  14. Serve the beef with salad and sauce
  1. Cheese and Walnut mix:
  2. Mix blue cheese, butter and walnut
  1. Gravy Sauce:
  2. Using the same beef pan, sauté garlic, shallots, and butter until it’s fragrant
  3. Add beef broth, beef juice and cream
  4. Let it simmer
  5. Strain it
  1. Salad:
  2. Mix all salad ingredients in a bowl
