Steamed Fish with Lime and Green Chillies

  • 2 Sea bass or Sea bream (medium size)
  • 2 large green Chillies
  • 2 sticky Lemongrass
  • 4-5 sprigs of Coriander stalks and roots
  • ½ teaspoon white Peppercorns
  • ⅕ teaspoon of Palm sugar
  • 4 sprigs of holy Basil
  • 2 tablespoons of Fish sauce
  • 1 tablespoon Garlic chives finally chopped
  • 1 Lime sliced
  • Banana leaf
  1. In a pestle and mortar pound the green chilli, lemongrass to a paste and add the coriander root, peppercorns, and pound further
  2. To this add palm sugar, holy basil and fish sauce and stir gently in with a spoon
  3. Add the chopped chives
  4. Lay banana leaf on the worktop , then lay lime slices on top of the leaf
  5. Fill the fish cavity of both fish with the mixture then lay the fish on top of the lime slices and then wrap in banana leaves and tie with string to secure the leaf is wraped well around the fish
  6. Bake in the oven at 180 for 20 minutes
