Studio Roast Chicken

  • 1 whole Chicken
  • 4 strips of Bacon
  • 1 cup Chicken stock
  • ½ kilogram Squash
  • ½ kilogram Sweet potato
  • 1 teaspoon Marjoram
  • 1 teaspoon Rosemary
  • 2 tablespoons Oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • Corn Relish:
  • ½ cup Bacon bits
  • ½ cup Red bell pepper (diced)
  • ¼ cup Green bell pepper (diced)
  • ¼ cup Balsamic vinegar
  • 1 head roasted Garlic
  • 1 cup Corn
  1. Wash chicken under running potable water, after washing be sure to dry your chicken with a towel then rub the chicken with seasoning
  2. marjoram, rosemary, salt and pepper then place into the chiller
  3. In a large pot, add bacon and sauté for 4 minutes so that the fat will render out
  4. Then add the squash and sweet potato and leave it for 3 minutes so that the caramelization can occur. Give it a flip and place the chicken on top. Cover pot and place into the oven at 350 degrees for 1 and a half hours
  5. At the same time, start the relish by browning your bacon and making it into bacon bits
  6. Reserve the oil for that is what you will use to sauté the peppers and corn
  7. Deglaze the pan with balsamic vinegar and smash in the roasted garlic
  8. Once the chicken is ready, place on the plate by arranging the squash and sweet potatoes
  9. Place chicken on top and serve the corn relish as an accompaniment
