Sweet Potato Balls with Jackfruit
Asian dessert of sweet potato balls to end off a meal by Marinka from At Home with Marinka

  • 1 purple potato, boiled & mashed
  • 1 yellow potato, boiled & mashed
  • 100 grams tapioca starch, 50 gr for each potato
  • Boiled water
  • 100 grams boiled sago
  • 2 pieces jackfruit, diced
  • Pandan syrup
  • 100 milliliters coconut milk
  • 1 pandan (screw pine) leaf
  1. Boil the coconut milk. Wait until it’s slightly simmering and add torn pandan leaf. Set it aside
  2. Separate the purple and the yellow potatoes
  3. Add tapioca starch in each bowl of potatoes, and make a dough by mixing it together
  4. Make small balls from the dough
  5. Put the yellow balls into a tray full of tapioca scratch and coat them evenly
  6. Put the yellows balls into boiled water and wait until they float up
  7. Drain it
  8. Repeat the steps for the purple balls
  9. Put the potato balls into the glass
  10. Add sago and jackfruits then garnish it with pandan leaves
  11. Pour the pandan syrup
  12. Serve it with warm coconut milk
