Sweet Potato Fries with Chili Coconut Dip

Ingredients
  • Sweet Potato Fries:
  • 2 litres vegetable oil
  • ½ teaspoon salt
  • ½ teaspoon smoked paprika
  • ½ teaspoon ground cardamom
  • 2 medium sweet potatoes, peeled
  • ½ cup cornstarch
  • Chilli Coconut Dip:
  • 1 tablespoon grape seed oil
  • ½ teaspoon brown mustard seeds
  • ¼ cup dried curry leaves, crushed
  • ½ teaspoon ground coriander
  • ½ teaspoon red Chilli powder
  • Pinch of salt
  • Pinch of pepper
  • 3 tablespoons unsweetened coconut flakes
  • Pinch of salt
  • ½ cup mayonnaise
Method
  1. Sweet Potato Fries:
  2. Heat oil in a large pot with a heavy bottom, or in a deep fryer to 350°F
  3. Make sure the oil level is no more than one third of the pot as it will rise during the frying process
  4. Mix the paprika, cardamom and salt together in a small bowl
  5. Cut the sweet potatoes into 1/4-inch thick slices and then cut the slices into 1/4-inch sticks
  6. Put the cornstarch into a large bowl and add the sweet potatoes and toss well using your hands to make sure they are well coated
  7. Working in batches, fry in the hot oil until golden brown, about 6-7 minutes
  8. Drain on paper towels and then sprinkle liberally with spice mixture
  9. Serve with Chilli Coconut Dip

  2. Heat the oil in a skillet and add the spices, salt and pepper and coconut
  3. Toast for about 2-3 minutes, until coconut is golden brown
  4. Place in a bowl with the mayonnaise and stir well to combine
  5. Serve with Sweet Potato Fries
