Szechuan Spicy Prawns with Wild Fern

Ingredients
  • 250 grams Wild ferns
  • 4 tablespoons Soy sauce
  • 1 teaspoon coarse Chilli flakes
  • 1 teaspoon Sugar
  • ½ teaspoon ground Black pepper
  • 2 tablespoons Oyster sauce (optional)
  • 1 tablespoon Cornstarch
  • 4 tablespoons Water
  • 2 cloves Garlic, finely chopped
  • 1 large White onions, finely chopped
  • 1 inch Ginger, finely chopped
  • 1 stalk Spring onion, thinly sliced
  • 600 grams medium sized Prawns, peeled and deveined
  • 1 tablespoon Sesame oil
  • 3 tablespoons Palm oil
Method
  1. Rinse fern thoroughly then place in a bowl of cold water
  2. Remove any bits of the brown papery coverings, and rinse again until they look green and clean, cut into 2 inches long
  3. Heat palm oil in a large, deep pan and allow a few minutes for it to get very hot
  4. Add sesame oil and sauté garlic, onions and ginger for a minute, stirring constantly, until they begin to brown
  5. Add soy sauce, a bit of water, chilli flakes, sugar, black pepper and oyster sauce, cover the pan, reduce heat to medium low and let simmer for 5 minutes, stirring occasionally
  6. In a separate bowl, combine the cornstarch and water, and set aside
  7. Add the fern into the pan and stir all together
  8. Add prawns during the last few minutes of cooking. Stir in cornstarch mixture and let heat until thickened. Finally, add in spring onions
