Tablescapes Sisig

  • Yield 4 servings
  • ½ kilogram Oxtail (pre-boiled)
  • Chicken Pate
  • ½ kilogram Chicken liver
  • 1 tablespoon Butter
  • 1 cup Red wine
  • To taste Salt and Pepper
  • 3 Garlic
  • ½ Yellow onion
  • 1 Chilli
  • 1 stick of Butter
  1. Pre-cook your oxtail in salted water for 2 hours Cool and set aside
  2. Then chop into small pieces
  3. In a pan, add butter, chicken liver and sauté for 1 minute
  4. Add red wine and simmer for 6 minutes or until the wine reduces to a syrup
  5. Season with salt and pepper and add straight to the food processor and blend with onions, garlic, chilli and remaining butter
  6. Blend until smooth and adjust seasoning
  7. In a metal bowl, add oxtail bits and mix in some of your pate. Mix until it becomes a smooth mass
  8. Place on a hot plate and serve
