Teriyaki Sirloin Beef & Bean Salad

  • ⅓ cup good quality Soy Sauce
  • ¼ cup Rice Vinegar
  • 2 tablespoons Dark Brown Sugar
  • 1+½ tablespoons grated fresh Ginger
  • 2 cloves Garlic minced
  • Pinch Chilli Flakes (optional)
  • 1+½ pounds top Sirloin steak
  • Miso Dressing
  • 1+½ tablespoons Light Miso Paste
  • 1+½ tablespoons Honey
  • 1+½ tablespoons Rice Vinegar
  • 1+½ tablespoons Soy Sauce
  • 1+½ tablespoons water
  • 1+½ teaspoons grated fresh Ginger
  • 5 tablespoons Vegetable Oil
  • Dash Sesame Oil
  • Salad
  • ⅔ cup Dried Adzuki Beans
  • 3 cups finely shredded Napa Cabbage
  • 227 grams fresh Green Beans, blanched, cut into 1-inch pieces and chilled
  • 227 grams Button Mushrooms, sliced
  • 2 cups diced Cucumber, cut into ½-inch pieces
  • 1 cup Bean Sprouts
  • 4 tablespoons fresh Coriander leaves
  • 2 tablespoons Mint leaves
  • 1 tablespoon Black or White (or mixed) Sesame Seeds, lightly toasted
  1. For beef mix soy, vinegar, sugar, ginger, garlic and Chilli flakes (if using) together in a baking dish
  2. Place steak into marinade, turning once, wrap in plastic and chill for a minimum of 2 to a maximum of 6 hours, turning occasionally. Remove steak from marinade to a plate and pour marinade into a pot and simmer for 5 minutes
  3. Preheat a grill on medium high and grill steak for about 6 minutes, rotating 90° after 3 minutes. Turn steak over and cook for another 6 minutes, rotating once, for rare to medium rare, and baste steak with sauce. Let steak rest for 8 minutes before slicing thinly
  4. For miso dressing. Whisk all ingredients together and chill until ready to serve
  5. For salad, simmer adzuki beans in unsalted water until tender, about 25 minutes, then drain and rinse to cool
  6. Combine all salad ingredients in a large bowl and toss with miso dressing
  7. Arrange salad on a large platter (or on individual plates) and arrange slices of sirloin steak overtop
  8. Alternatively steak can be marinated and grilled ahead of time and served chilled over salad
