  • 1 kilogram Beef, sliced (against the grain)
  • Palm oil
  • Kaffir lime leaves
  • Brown sugar
  • Lime juice
  • Fish sauce
  • Wild eggplant
  • Thai Sweet basil leaves
  • 1½ cup Coconut milk
  • 1 Onion, blended
  • 2 Green chillies, blended
  • 10 Bird’s eye chilli, blended
  • Ginger, blended
  • Turmeric, blended
  • Shrimp paste, blended
  • Ground White pepper
  • 2 stalks Lemongrass, blended
  • Ginger, blended
  • Coriander seed powder
  • Cumin powder
  • Salt
  1. Heat palm oil in pot and add in ½ cup coconut milk, cook for a minute and add dried spices and blended spices
  2. Sauté till fragrant
  3. Add beef, abit of water and the rest of the coconut milk
  4. Add brown sugar, lime juice, fish sauce, kaffir lime leaves, basil and eggplants
  5. Add brown sugar and salt to taste
