Thai Beef Salad

Ingredients
  • Marinade:
  • 2 x 200 grams sirloin steaks
  • 2 tablespoons fresh ginger
  • 2 cloves garlic
  • ¼ cup lime juice
  • 1 shallot, finely diced
  • 2 tablespoons fish sauce
  • ¼ cup coriander, chopped
  • 2 tablespoons soya sauce
  • Salt and pepper
  • Salad:
  • 4 cups cos lettuce
  • ¼ cup spring onions, chopped
  • ¼ pea shoots
  • ¼ cup bean shoots
  • ½ cup fresh mint, chopped
  • ¼ cup coriander
  • ½ cucumber
  • ¼ cup chinese cabbage, chopped
  • 3 tablespoons chopped peanuts
  • 1 long red, finely sliced
  • Deep fried shallots
  • Toasted sesame
  • Dressing
  • ¼ teaspoon fish sauce
  • 2 teaspoons honey
  • 2 tablespoons lime juice
  • 1 teaspoon grated ginger
  • 2 tablespoons soya sauce
  • 2 tablespoons rice wine vinegar
  • Kewpie mayonnaise (optional)
Method
  1. Combine the ingredients for the marinade and process until well blended.
  2. Lace the beef in a container, top with the marinade and allow to rest for a minimum of one hour and up to overnight.
  3. Combine all of the salad ingredients into a large mixing bowl.
  4. Heat a barbeque or grill pan until hot, add the steak and grill for 3-5 minutes per side or until the steak is cooked to your liking. Remove from the heat and allow to rest, before thinly cutting into pieces.
  5. For the dressing, place all of the ingredients into a bowl and whisk.
  6. Before serving the salad toss with the dressing and top with the slices of cooked beef.
