Thai-Style Fish and Chips

Ingredients
  • 8 large raw King Prawns
  • Marinade
  • 2 tablespoons Tamarind paste
  • ½ teaspoon Shrimp paste
  • 3 tablespoons Palm sugar
  • 1 tablespoon of Fish sauce
  • 1 teaspoon Chilli flake
  • 1 teaspoon hot Chilli powder
  • 50 grams cornflour + 50o g for coating
  • 50 grams self raising flour
  • Pinch of salt
  • 125 millilitres of sparkling water
  • 150 grams of uncooked Prawn Crackers (crushed)
  • Chips
  • One large Potato
  • 6 Lime leaves shredded.
  • Dressing
  • 6 tablespoons of Mayo
  • 3 tablespoons Crème Fraiche
  • Zest and juice of 1 Lime
  • 1 tablespoon Fish sauce
  • 1 teaspoon Palm sugar
  • Small handful of Mint and Holy Basil
  • 2 spring Onions
Method
  1. Peel off the middle part of the prawn shell leaving the head and tail on and remove th e digestive track
  2. Put all the ingredients for the marinade above in the bowl add the prawns and mix well to coat the prawns. Set aside until ready to cook
  3. Mix the cornflour, self raising flour, salt and water into a batter
  4. Put the remaining cornflour onto a plate and on a separate plate put the crushed prawn cracker
  5. Heat the oil in a wok or a deep fat fryer to 170c
  6. Now dip each prawn separately in the cornflour , followed by the batter and crushed prawn crackers
  7. and cook the prawns for 2-3 minutes until the rice cracker puff up and they are nice and crispy
  1. Double Fried Chips with chilli and lime leaves
  2. Julienne one large potato and soak in cold water…
  3. Heat a wok or fryer to 140c. Put the chips into the oil and cook for 2-3 minutes. This can be done well in advance
  4. Remove and allow to cool on kitchen paper
  5. Allow to cool completely until ready to serve then reheat the oil to 180c and put the chips into the fryer and fry until crispy
  1. Dressing
  2. Combine all the above ingredients into a bowl and mix well
  3. Serve with the prawns and chips
