Ingredients
  • 1 kilogram Red snapper
  • 6 stalks of Lemongrass
  • 8 Kaffir lime leaves
  • 3 Limes
  • 5 Shallots, peeled
  • 4 tablespoons Fish sauce
  • Salt, White pepper
  • 2 tablespoons Vegetable oil
Method
  1. Preheat the oven to 200C. Thinly slice the limes and shallots. Using a pestle or the flat side of your knife, bash the lemongrass to bruise it and release its flavour. Rub the inside and outside of the fish with a pinch of salt and white pepper, then rub the vegetable oil all over it
  2. Lay the half sliced shallots and bruised lemongrass on a lined baking tray, and then place the fish on top of this base. Fill the cavity of the fish with the kaffir lime leaves, lime slices and the remaining lemongrass and shallot slices
  3. Drizzle the fish sauce over the fish and bake for 12-15 minutes until cooked through and golden brown on the outside
