Ingredients
  • 1st Way - Potato Rosti:
  • 1 potato, peeled
  • ⅛ teaspoon salt
  • ⅛ teaspoon black pepper
  • 1 tablespoon oil
  • 1 tablespoon butter
  • 2nd Way - Aioli Salad Potato:
  • 2 boiled potatoes, diced
  • 3 tablespoons mayonnaise
  • 1 teaspoon cayenne pepper
  • 1 teaspoon chili flakes
  • ⅛ teaspoon black pepper
  • 2 roasted garlic, crushed
  • 3rd Way - Potato Chips:
  • Sea salt and vinegar potato chips
  • Bonito, for serving
  • Greens, for serving
  • Edible flowers, for serving
Method
  1. 1st Way:
  2. Shred the raw potato
  3. Squeeze it so the liquid is out
  4. Season it with salt and black pepper
  5. Add a bit of oil in a pan, put the shredded potato in and quickly spread it
  6. Spread a bit of butter around on the side
  7. Let the bottom side brown, then flipped it
  1. 2nd Way:
  2. Mix mayonnaise, cayenne pepper, chili flakes, black pepper and roasted garlic in a bowl
  3. Add the boiled potatoes into the bowl
  4. Mix all well together
  1. Plating:
  2. Put the potato rosti on a plate
  3. Add potato salad
  4. Add potato chips on top of it
  5. Add bonito, greens, and edible flowers.
  6. Ready to serve
