Ingredients
  • 4 giant River Prawns
  • 4 cups Water
  • 2 stalks Lemongrass
  • 4 Kaffir lime leaves
  • 6 Straw mushrooms
  • 1 tablespoon roasted Chilli jam
  • ¼ cup Lime juice
  • ¼ Fish sauce
  • 1 tablespoon Bird's eye chilli
  • 4 dried Spur chillies
  • 1 tablespoon Milk
Method
  1. Put lemongrass, galangal, kaffir lime leaves and a little bit of salt in the boiling water and cook until fragrant
  2. Add river prawns and straw mushrooms
  3. Mix roasted chilli jam, fish sauce, lime juice and milk. Stir to disslove dissolve
  4. Reduce heat and add the crushed bird's eye chillies and roasted dried spur chillies
