Tomato Rice

  • 2 cups Jasmine rice, washed
  • 2 cups diced Tomato
  • 2 cloves Garlic, finely chopped
  • 1½ cups Tomato passata
  • 2½ cups Water or Stock
  1. Heat up 2 tablespoons of oil in a pan, sauté garlic for 30 seconds, then add the diced tomatoes. Stir for a further 30 seconds, then add the rice and toss until each grain of rice is coated with oil
  2. Transfer the rice and tomato mixture to a rice cooker, add water/stock and passata, and season if you like. Cook the rice in the rice cooker, and serve when ready
