Tropical Overnight Oats

- ⅓ cup Rolled oats
- ⅔ cup fresh Coconut milk (the kind that’s sold in the chilled section)
- 1 Mango, diced into 2cm cubes
- ½ tablespoon Chia seeds
- A pinch of Salt
- ¼ teaspoon Cinnamon
- 1 tablespoon chopped Palm sugar (gula melaka or gula merah)
Mix all the ingredients except the mango together, and transfer to a jar. Top with the mango, cover with a lid and refrigerate overnight. Serve!
