Ugo Bigyan's Salad

  • 2 pieces grated Goconut
  • 1 cup Vinegar
  • 2 tablespoons Pepper
  • 2 tablespoons Sugar
  • 1 teaspoon Salt
  • 4 cloves chopped Garlic
  • 1 diced Onion
  • 1 kilogram Banana hearts
  1. You have to roast the grated coconut but be sure not to over cook because it will become bitter, after roasting put it in a bowl, add vinegar then squeeze! You just made roasted coconut cream. Be sure to strain
  2. Transfer the coconut milk into another bowl then add pepper, sugar, salt, garlic and onion. Mix well
  3. Lastly add the boiled banana hearts and let soak for 30 minutes to ensure the full flavor has developed
