Ingredients
  • 1 small Chicken or half a large Chicken
  • 3 Tomatoes
  • Salt
  • Palm Sugar or Honey
  • 1 baby Star fruit
  • 2 Ginger torch flowers
  • 40 grams fresh Ginger
  • 2 – 3 Daun Adung & Buah Adung
  • 1 bunch Shallots
  • 4 cloves Garlic
  • Fish Sauce
  • Soy Sauce
  • 1 large Red Chilli
  • 2 litres Water
  • 30 millilitres Veg oil
  • 1 Lime
Method
  1. Remove breasts from the chicken. Chop bones and fry till golden
  2. Cover the bones in water. Bring to a boil, skim.
  3. Add the tomato seeds, half the ginger, garlic and shrimp paste. Cook for 40 minutes
  4. Poach the breast in the stock for the last 20 minutes of cooking. Strain and pick the leg meat
  5. Add to a bowl with diced and shredded raw, tomato, shallot, fruits and other ingredients. Rest and slice the breast
  6. Adjust the seasoning and consistency of the broth with honey, fish sauce. Then add the fresh ingredients, leg and breast meat
