Roast Duck Salad
A salad is a great way to convince yourself you’re on a diet, but you can always step over to the duck side with this tasty recipe!

Step 1 - Make the dressing
- In a small bowl, combine olive oil, rice vinegar, honey, soy sauce, mint and sesame oil, then whisk until smooth. Set aside.
Step 2 - Assemble salad
- In a large bowl, combine the salad greens, unchopped coriander, spring onion, and carrot in a salad bowl and toss well.
- Set aside a few slices of the duck breast for garnish. Place the rest of the duck meat in the salad; toss to combine. Add half the dressing; toss to coat. Roasted duck has around the same number of calories as roasted chicken – 140 calories in half a cup!
Garnish and serve
Portion out to plates. Arrange the sliced duck breast and pear over the salad. Garnish with walnuts and unchopped coriander. Serve the remaining dressing on the side and enjoy.
