Ingredients

A perfect side dish full of roasted vegetables and a salty drizzle of pesto sauce.

Step 1

  • Heat oven to 200 degrees celcius.

  • In a baking tray, place all ingredients.

  • Drizzle olive oil, salt and black pepper and thyme. Mix well.

Step 2

  • Roast till vegetables are cooked.

  • Remove from oven, sprinkle more fresh thyme. Serve immediately with pesto sauce.
