Forget about chili crab and black pepper crab, here’s a quick and easy recipe for this popular seafood dish that’s captured the hearts of many!

Step 1 - Coat soft shell crabs

  • In a bowl of cornstarch, evenly coat soft shell crabs.

  • In a separate bowl of egg whites, coat the soft shell crabs into the egg whites and back into cornstarch again.

Step 2 - Deep-fry coated soft shell crab

  • In a pot on high heat, heat up enough vegetable oil for deep-frying.

  • Gently place coated soft shell crabs into the hot oil and deep-fry for 5 minutes, until golden brown and crisp.

  • Remove from oil and drain excess oil on paper towel-lined plate. Set aside.

Step 3 - Fry salted egg sauce

  • In a pan on high heat, heat up 3 Tbsp vegetable oil and fry garlic for 1 minute, until browned and fragrant.

  • In the same pan, add curry leaves and chili padi.

  • Fry for 1 more minutes, until fragrant.

  • When fragrant, add salted egg yolks and butter to the pan.

  • Fry for 2 to 3 minutes, stirring continuously, until mixture becomes foamy.

Step 4 - Toss deep-fried soft shell crabs in the sauce

  • Toss deep-fried crabs in the sauce until evenly coated.

  • Season to taste with sugar and salt if needed.

Crabs are removed from the water when they molt from their exoskeleton, to prevent any hard shells from forming.

Plate and serve!
