Step 1 - Cook teriyaki sauce

  • In a pot on medium heat, add 2 tbsp vegetable oil. When hot, add garlic and ginger and fry for 1 minute, until fragrant and caramelized.
  • Add sugar, 160 ml light soy sauce, 25 ml rice vinegar, white part of spring onions and 450 ml water, then bring to a boil.

Step 2 - Cook chicken

  • In the same pot, add chicken legs, cover, reduce to heat to low and simmer for 1½ hours, until chicken is tender.
    You can use a slow cooker for this recipe as well - start the dish before you run some errands and come home to a steaming, delicious dinner.

Plate and serve!

Allow meat to fall off the bone, then tear strips away. Serve on top of steamed white rice, then garnish with sesame seeds, 1 tsp sliced spring onion. Serve hot!
