‘Soto ayam’ is an Indonesian-style spiced chicken soup -full of flavor and a great alternative to classic Western chicken soups! Here’s how to do it with an all-in-one cooker!

Step 1 - Blend and fry spice paste

  • In a blender, add ginger, galangal, shallots, turmeric powder, chili, candlenuts, coriander seeds, white peppercorns and 200 ml vegetable oil. Blend into a paste.

    Spice pastes are also known by the name in Bahasa Malaysia and Bahasa Indonesia as rempah.
  • Add spice paste into cooker and select the SAUTE/SEAR, HIGH TEMP option then select START. Fry for 10 minutes, or until oil separates from the paste.

  • Add lemongrass and kaffir lime leaves.

Step 2 - Boil chicken soup

  • To the cooker, add 2 L water, chicken and 4 Tbsp salt. Select PRESSURE COOK, MANUAL and adjust timing to 10 minutes. Ensure vent is on the SEAL setting.

Step 3 - Serve soto ayam

  • Add spice paste to the chicken soup, then stir to mix. Reduce heat to low, and simmer for 30 minutes. If chicken is too chunky, break the chicken apart and remove bones if desired.

Plate and serve!
