Soy Fried Peppery Chicken

Step 1 - Marinate Chicken
- In a big bowl, add chicken drumsticks, 4 Tbsp soy sauce, 4 Tbsp oyster sauce, 2 Tbsp black pepper, 1 Tbsp white pepper, minced garlic, minced ginger, shallot, 2 cups vegetable oil, 2 tsp salt and 1 Tbsp brown sugar.
- Mix until well combined, and set aside to marinate for at least 30 minutes.
You can replace chicken drumsticks with chicken wings or have a combination of both
Step 2 - Fry chicken
In a pan on high heat, add in enough vegetable oil to fry chicken. Add in chicken to hot oil and fry for 6 - 8 minutes or until golden brown.Constantly turn chicken drumsticks while frying to ensure even cooking.
Once brown and cooked through, remove chicken and place on paper towel-lined plate to drain excess oil.Do not overcrowd your pot when deep-frying, as this will drastically lower the heat of the oil and cause food to become oily and soggy.
Plate and serve!
Place chicken drumsticks together on a serving plate. Serve hot.
