A traditional Hakka dish with a twist, this stuffed bitter gourd will win hearts at the dinner table

Step 1 - Cut and de-seed bitter gourd

  • Cut the bitter gourd to 2 cm cylinders, deseed, sprinkle salt and leave for 15 to 20 minutes

Step 2 - Cook the bitter gourd

  • In a pot, heat up enough vegetable oil for deep-frying. When the oil is hot, gently add in bitter gourd a few at a time and fry for 30 to 40 seconds.
Bitter gourd is known to be highly beneficial to diabetics. This is due to an insulin-like chemical called charantin that has hypoglycemic effects

Step 3 - Cook the stuffing

  • In a pan on high heat, heat up 2 Tbsp vegetable oil and 2 Tbsp sesame oil together. Fry garlic, ginger and fermented black beans. Sauté for 1 to 2 minutes, until fragrant.

  • Add in 3 Tbsp soy sauce, 1 tsp white pepper and 2 Tbsp Shaoxing rice wine.

  • Add in chicken pieces and toss until evenly coated. Stir-fry for 2 minutes.

Step 4 - Stuff the bitter gourd

  • In a dish safe for steaming, place bitter gourd cylinders neatly and spoon the chicken pieces into them.

Step 5 - Steam the bitter gourd

  • Steam the stuffed bitter gourd mixture for 15 to 20 minutes, until chicken is cooked.

  • Once cooked, sprinkle the diced red chilies and spring onions on top and return to steam for another 3 to 4 minutes.

Garnish and serve!
