Step 1 - Clean and boil chicken
Clean and cut the chicken into small pieces then throw into boiling water.
Remove after boiling for 1 minute. Ensure not to cook chicken thoroughly as it will be steamed further.
Step 2 - Mix the marinade
- In a large container, mix the ginger, wood ear fungus, goji berries, red dates, chicken essence, salt, Chinese rice wine and 1 Tbsp soy sauce together.
Step 3 - Marinate and steam the chicken
Place the semi-cooked chicken into the mixture and mix well
Steam for 30 minutes or until chicken is cooked.
Plate and serve!
Garnish with spring onion and coriander then serve hot!
