A simple and healthy boiled chicken that can be easily paired with any dish!

Step 1 - Prepare the chicken

  • Remove any giblets, and rinse the chicken before boiling it.
Giblets means the liver, heart, gizzard, and neck of a chicken orother fowl.

Step 2 - Boil the chicken

  • Place the chicken in a large pot with crushed ginger, 1 Tbsp peppercorns and 1 Tbsp rock salt, then add a sufficient amount of water to fully submerge the chicken.

  • Cover pot and bring to a boil.

  • Reduce heat to a gentle boil and cook for about 90 minutes.

  • Remove the chicken and leave to cool.

This is a Thai style of preparing chicken for dishes such as khao man gaior chicken rice. In Singapore, Malaysia and some parts of China, the boiled chicken is submerged in an ice bath. This stops the cooking process, locks in the juices and gives the chicken skin better texture
