Ingredients

  1. Heat up a tagine vessel over low medium heat, add olive oil. If you don’t have a tagine, you can use a casserole.
  2. Add onion and cook till translucent.
  3. Add garlic. Leave to cook.
  4. Turn off heat. Add vegetables and layer them, with the ones that take the longest to cook on the bottom layer.
  5. Add vegetable broth. Sprinkle dry spices. Distribute well all over the vegetables.
  6. Sprinkle parsley and coriander leaves.
  7. Heat up tagine again under low medium heat.
  8. Cover with lid and leave to cook under low heat for about 40 mins.
  9. Remove from heat.
  10. Sprinkle over flat parsley and chopped coriander.
  11. Serve with couscous or flat bread.
