White Wine Chicken Adobo
Inspired by the national dish of Philippines, this chicken adobo with white wine makes the dish extra fragrant.
Combine the chicken with the white wine and soy sauce.
Leave to marinate for at least an hour, or even overnight.
Heat up the oil in a large pot over medium heat, and saute the garlic until fragrant.
Add the chicken with its marinade, watching out for any splatter.
Add water, bay leaves, peppercorns and simmer the chicken for 20 minutes, until almost cooked.
Add 1 tablespoon of vinegar, and simmer for another 10 minutes until the chicken is cooked through.
Taste, add vinegar and sugar as necessary. Season with salt and extra black pepper if you like.
