Inspired by the national dish of Philippines, this chicken adobo with white wine makes the dish extra fragrant.

Step 1

  • Combine the chicken with the white wine and soy sauce.

  • Leave to marinate for at least an hour, or even overnight.

Step 2

  • Heat up the oil in a large pot over medium heat, and saute the garlic until fragrant.

  • Add the chicken with its marinade, watching out for any splatter.

  • Add water, bay leaves, peppercorns and simmer the chicken for 20 minutes, until almost cooked.

Step 4

  • Add 1 tablespoon of vinegar, and simmer for another 10 minutes until the chicken is cooked through.

  • Taste, add vinegar and sugar as necessary. Season with salt and extra black pepper if you like.

Serve with rice!
